The primary function of a banquet server is to provide professional and courteous service. This person is responsible for direct communication with the Banquet Manager, preparing tables with proper service wares, serving, removing of all service wares from each course served, and the cleaning, refilling, and storage of service wares (also known as side-work). The primary functions of a houseman is the general up keep and maintenance of the facility, setting up all banquet rooms with tables and chairs, and buffets according to floor plans. Housemen are responsible for the use, operation and general maintenance of machinery for buffing floors, shampooing rugs, power washing and the vacuuming of the parking lot. The primary functions of a prep cook are to follow established recipes, proper storage, labeling, and dating of food items, rotation of products to insure freshness, and assist in serving or plating entrées. This person is responsible to maintain high standards in production, sanitation, and personal hygiene, and must be consistent in portioning fish, beef, chicken, and other food products we serve. Utility Worker
The primary functions of a utility worker/dish washer are the storage and cleaning of food carts, pots, pans, and service wares. This person is responsible to keep the floors clean and dry and trash emptied. The utility worker is often utilized in multiple areas of need; therefore, they must be opened to be cross-trained to conduct many different duties such as, but not limited to plating entrées, prepping food for parties, and counting service wares.
